Beat the No Sugar - No Flour Blues

 
 

I get asked frequently for recipes from my clients and readers, so I've started this page of easy and delicious recipes. Many of my recipes are really just good combination and seasoning ideas; plan on loose measurement and cooking to your taste. Onions, leeks and shallots are natural prebiotics: they nurture the good bacteria in your system and encourage balance. Use them freely.

Sinfully Good (And Good For You) Veggies

 

Spinach
Bell Peppers (red/orange/yellow)
Parmesan cheese, grated
Leeks (or shallots or onions)
Olive oil

Saute leeks in some olive oil on medium low heat. When they start to caramelize, add peppers, and any spices you enjoy (garlic salt, lemon pepper, etc.) Just as the peppers begin to soften, add a bag of fresh spinach. Raise the heat to medium and cover. When it starts to create condensation, lower the heat and let it simmer, covered, until the spinach is soft. Remove from the heat, stir in Parmesan cheese to taste, mix and serve. We started making this as a side dish and now often make it as a meal.

Turkey bacon
Eggs
Cheese (optional) 

Cook turkey bacon according to directions and reduce the heat to low. Make a ring of bacon in the pan for each serving, arranging it like a wreath. into the center of each ring, place cheese if desired (or spinach if you like or???), and then crack an egg onto the center of the wreath. Raise the heat to medium, drop a tablespoon of water into the pan and cover. when eggs are poached to your liking, remove and serve. This is a fun recipe to get creative with!

 
 

 

 

 

Anytime Salad Delight Plus

   

Tomatoes, diced
Cucumbers, diced
Onions, diced
Olive oil
Lemon Juice

Traditional Israeli salad is a mixing of diced cucumbers, tomatoes, bathed in a dressing of olive oil and lemon juice. This vitamin packed, fiber rich (filling), low calorie dish is eaten for or with breakfast, lunch, dinner - anytime. though they are a great prebiotic, I leave out the onions because I don't like onions; sometimes I substitute leek.

What's wonderful about this recipe is that it's like stone soup...... add anything and it just gets better! I always add colored bell peppers, diced. sometimes I make up a can of tuna and add that to the salad instead of having it on the side -- it's a real budget stretcher! It's wonderful with pieces of cheese, sliced or diced eggs, leftovers...........
